Borel Pierre
Winemaker Pierre Borel owns a monopoly vineyard of 2.5 hectares in the Bourgueil appellation, in the central Loire Valley. On this site surrounded by a wall, vines of the Cabernet Franc variety are grown over a hundred years old. The plot borders on a quiet village on one side and a forest on the other, which means there is no risk of pollution from neighboring producers. The vineYard is officially certified as organic. Pierre does all the work in the vineyard and winery exclusively by hand including bottle corking.
Borel produces only five thousand bottles of incredible quality wine a year. Simplicity is key here-Pierre makes only one wine and seeks to vinify in as straightforward a way as possible. The vinifications are natural, not very interventionist, without addition or filtration. The sandy grave soils yield fragrant fruit. Pierre’s wine is honest, understated and a lovely representation of Cabernet Franc from this part of France.
