Domaine de Cassiopee

Hugo Mathurin and Talloulah Dubourg founded the Domaine de Cassiopée in January 2020. Located in Sampigny-Lès-Maranges, the Domaine de Cassiopée covers 5 hectares, mainly in the Hautes Cotes de Beaune, Maranges and Bourgogne. It is in this green setting that Talloulah and Hugo took over the vines and immediately carried out the organic conversion of the vineyard, which will be effective in 2023.

A duo with powerful and overflowing energy, bubbling with ideas and above all knowledge techniques allowing them to make great wines from their first vintage. Tallallah and Hugo. trained oenologists, worked in prestigious domains before setting up on their own. For Tallallah, it is at the Clos de Tart that she will finalize her diplomad’cenoloaue before working at Marie Thérese Chappaz in Switzerland. Huco worked for him at Roulot then Muanier before taking the reins of the famous wine school in Beaune (la Viti) for 2 years.

In the cellar, the vinifications are intended to be little interventionist, with little or no sulphites (with a very light dose during bottling). Talloulah and Huco also work with the containers: there is an Italian terracotta tank of 500 liters in the cellar, than more classic wooden barrels ranging from 228 to 450 litres. It was a real crush that we had during the tasting, not to mention the personality of this duo which has, it must be admitted, very good days ahead of it.
