Violot Guillemard

Domaine Thierry Violot-Guillemard is located in the Pommard village of Cote de Beaune. It is a family-owned boutique winery in the region. After 5 generations of inheritance, it is now managed by Thierry Violot-Guillemard.

There are 9 vineyards within the winery, which are located in Pommard, Volnay, Meursault,  Monthélie, Beaune, 5 hectares. Among them, the terroir particularly outstanding are the three 1er Crus climats, Les Rugiens, La Platiere and Clos Derriere Saint-Jean.

Violot Guillemard adheres to the traditional winemaking method. The wine is fermented with natural yeasts. New oaks are rarely used for ageing, and there is no clarification or filtration before bottling. Less intervention to preserve the characters of terroir. Usually, 1er Crus will undergo 5-6 days of low temperature maceration and 10 days of alcoholic fermentation. The winery produces both red Pinot Noir and Chardonnay. Its red wine is known for elegance and finesse. With the increase of ageing time, will take outstanding strength and complexity.
